Pigs Trotters in Madeira recipe
ingredients
4 pigs trotters, trimmed
1 onion, skinned and sliced
1 carrot, pared and sliced
1/2 leek, sliced
1 clove garlic
pinch dried rosemary
pinch dried thyme
pinch pepper
2 bayleaves
400-600 ml (1/2 - 3/4 pt) white wine
2 tbsp (30 ml) olive oil
3 tomatoes, skinned and chopped
30 ml (2 level tbsps) tomato paste
Madeira wine



method
1. Halve the trotters, wash them well and leave to soak for some hours in cold water.

2. Drain and put in a casserole with the vegetables, herbs and pepper. Cover with white wine and leave to marinade for 3 days in the refrigerator.

3. Drain the trotters, parboil them, drain and add the marinade, vegetables, olive oil, tomatoes and tomato paste; Simmer gently for 4 hours.

4. Strain the sauce and flavour with Madeira wine.

5. Dish up the trotters and serve with the sauce, accompanied by noodles.

It's hard to see how you could impress anyone with cooked pig's trotters - in a positive way, that is! The BBC food site is always a good place to start.

Have you any idea what you want to end up with? You could make a brawn but gently boiling the trotters with a hunk of ham till it is all rendered down. Strain and remove all meat and chop finely and put juice and meat in a bowl with some seasoning and allow to set in the fridge.

Try the following
Pigs' Trotters and Beans Potjie
Preparation Time: 30 minutes, plus overnight soaking plus 1 hour soaking
Cooking Time: 2 hours 20 minutes
Ingredients
4 pig's trotters
300g sugar beans, rinsed and soaked overnight
1 large onion, halved and sliced
25ml red or white wine vinegar
1 tsp Sugar
2 cloves
5g ground coriander
5g ground allspice
20g curry powder
10g ground turmeric
1 large bunch of coriander, chopped
salt and fresh ground black pepper
Olive oil, for dressing
1 garlic clove, chopped

Method
1. Soak the trotters in water for an hour, then drain and pat dry.

2. Meanwhile, drain the soaked beans, place in a large saucepan, cover generously with water and bring the beans to the boil. Reduce the heat and simmer for 45 minutes, until tender. Drain, place in a bowl, cover with cold water and set aside to cool.

3. Meanwhile, place the trotters in a large saucepan. Cover generously with water, bring to simmering point and simmer gently for 45 minutes.

4. Strain the trotters, retaining the liquor. Dice the strained trotters.

5. In a large pan place the liquor, diced trotters, onion, vinegar, sugar, cloves, coriander, allspice, curry powder and turmeric.

6. Bring to the boil, reduce heat and simmer for 45 minutes.

7. Mix in the chopped coriander and season with salt and freshly ground pepper.

8. Drain the cooled beans. Mix the beans with olive oil and garlic. Season with salt and freshly ground pepper.

9. Place the beans in a large serving bowl. Top with the pigs' trotters and serve.

OR Crubeens (pigs trotters)
Ingredients
4 brined crubeens (pigs trotters)
2 carrots
1 stick celery
1 onion
175ml/6fl oz wine vinegar
melted butter
dried breadcrumbs
pinch allspice
Method
1. Bandage the trotters in pairs on to splints so that they keep their shape while cooking.
2. Put in a pot with the vegetables and cover with water and the vinegar. Simmer for 6 or 7 hours.
3. Allow to cool in the liquid.
4. To serve, split the trotters in two and roll in melted butter and dried breadcrumbs mixed with a pinch of allspice. Heat slowly under a grill, or in the oven at 180C/350F/Gas 4, until hot and crisp on the outside.

best results with crock pot. fill with trotters.1/2 full of water,1/4 cup soy sauce, 1/4 cup w sauce, one large onion quartered.2 table sp minced garlic 1 table spoon crushed red peppers. cook on high until tender.

remember to shave the toes(i know it's gross) then boil untiil tender about 1hr 15 min then serve with parsley sauce and mashed potatoes!
