I like to use lettuce, dried cranberries (Craisins), diced apples, sunflower seeds, cheese, grilled chicken and raspberry vinaigrette.

Another good one is lettuce, black beans, salsa, ranch, cheese, and crushed tortilla chips.

Those simple and BEST thing that I love doing is getting walnuts, and adding them to a salad. THEN, get a raspberry vineagrette for the salad. It tastes like candy, and is extremely healthy. Just don't make a habit of this because walnuts are high in iron, and too much iron is not good for you.

Can they eat nuts? It they can, you could add all types of nuts or even roast them first before putting them into the salad. Just think of something crunchy. How are about dried fruits like dried cranberry and etc.

My favorite is mandarin oranages, water chestnuts, crispy asian noodles, cheese and lettuce, topped with a crispy chicken. A little restaurant by my house makes this, and serves it with a ginger dressing. Oh my goodness, it's delicious. I could eat it every day. . .The crispy chicken is just sliced up chicken cutlets that they top with a mixture of ground pecans, and plain bread crumbs. So yummy.

The best salad I ever had was at Grand Lux Cafe. It had about 100 ingredients in it. I remember the beets, chick peas, and avocado.
