Serves 6

Ingredients
600g beef mince
1 cup fresh wholemeal breadcrumbs
1 medium onion, finely chopped
1 clove garlic, crushed
1 tblsp tomato sauce
1 tblsp barbecue sauce
1 tsp wholegrain mustard
1 egg
18 (180g) feta-stuffed green olives, halved
Cooked pasta, to serve
Sprig of fresh oregano, to serve
TOMATO SAUCE
1 tblsp olive oil
1 red onion, finely chopped
1 clove garlic, crushed
720g jar tomato pasta sauce
2 tblsps finely chopped oregano

Method
1 To make the meatballs, combine mince, breadcrumbs, onion, garlic, sauces, mustard and egg in a large bowl. Using your hands, mix well.

2 Roll level tblsp of the mince mixture into a ball and then flatten to a disc about 1cm thick. Place discs onto baking paper-lined oven trays.

3 Place half an olive on each disc and, using your hands, mould meat mixture around olives to enclose it completely, rolling to form a ball. Return to oven trays. Repeat this process with remaining meat mixture and olives to make 36 meatballs.

4 Cook in a moderate oven (180C) for 20 minutes, turning halfway during cooking.

5 To make the tomato sauce, heat oil in a large pan. Add onion and garlic. Cook until soft. Stir in tomato pasta sauce and oregano. Bring to the boil and simmer, uncovered, until heated through.

6 Add meatballs to tomato sauce and gently stir through the mixture.

7 Serve meatballs and tomato sauce over cooked pasta. Garnish with a sprig of oregano.

Tip: Any olives can be used, just make sure they’re deseeded before rolling in mince.

Basic Meatball Recipe

12 meatballs, approx 25 min 10 min prep
Change to: meatballs, approx US Metric
1 1/2 lbs lean ground sirloin
1 whole egg
2/3 cup plain breadcrumbs, approx
1/4 cup milk
salt and pepper
3-5 dashes Worcestershire sauce

Mix the sirloin, egg, milk, salt/pepper,& the Worcestershire sauce.

Add as much of the bread crumbs as you need (mixture should be slightly moist).

Roll into desired sized balls.

Preheat oven to 375 degrees
.
Place onto a cookie sheet or 13x9 baking dish.

Bake meatballs for 15-23 minutes depending on size of meatballs.

Drain onto paper towels if necessary.

Add to any sauce that you want to pair the meatballs with, example: Spaghetti sauce, Sweet& Sour sauce.

This is just a basic recipe, have a little fun and add italian spices or asian spices.

Make the meatballs small for a cocktail appetizer or larger for Spaghetti& Meatballs.

Some of you may disagree with using lean beef but I've tried this recipe with so many different types of ground beef and find the sirloin tastes much better and surprisingly does not dry out.

I hope this works for you and don't give up if it doesn't work the first time!

u have your pasta sauce cooking ok here is the best thing to do get about a pound of ground beef add some crushed saltines, onions, 1 egg, a dash of milk, some minced garlic, and some mrs. dash roll into balls add to pasta sauce let them cook on med heat until done about an hour u might want to cut the heat down to med low if it bubbles too much make sure they don't stick cause sauce will if u cook it on too high of a temperature. Stir meatballs very little cause they make get mushy but i promise they're the best you'll ever eat

2 slices white toast bread (no crust)
1/2 cup tomato juice
500g topside mince or lamb minced
2 cloves garlic crushed
1 small onion finely chopped
3 tbs chopped parsley
2 tsp chopped fresh oregano or 3/4 tsp dried oregano leaves
salt & freshly ground black pepper
1 lge egg beaten
2 tbs oil
Crumble bread into a large bowl; add tomato juice & allow to soak for a few minutes. Add remaining ingredients (except oil) & combine well until mixture clings together.
With wet hands, shape into balls about size of a walnut.
Heat oil in a large frypan, & fry meatballs over medium heat until brown & cooked through, turning to brown evenly. This will take approx. 5 mins.
PS: you can make a lemon sauce with this & serve with boiled rice & greek salad

These are the quickest meatball recipe I have ever found. Take a pound of ground chuck, add a package of onion soup mix and roll into balls. You don't have to add any other seasonings, its all in the onion soup mix. Bake these at 350 for 15 minutes and then add to your sauce. These are delicious.

just call me the quick and easy queen, lol

1 lb ground beef
1 lb ground pork
1 tbs garlic powder
1 tsp onion powder
1 cup spaghetti sauce (may need 1 1/2 cups depending on how your mix comes out-there should be enough to moisten, but not drown the meat)

mix everything together -form into balls-cook

I usually just fry them in a pan till they are all nice and browned & cooked through- but you can put them in the oven as well
