It seems some restaurants, Earls for those who are familiar with this one, seem to make some amazing side orders of cooked vegetables that they serve with their meals.

They are sweet, very juicy, with a touch of butter. Vegetables they serve include carrots, asparagus, and beets. Beets are one thing I don't eat....unless of course it is at this restaurant.

Would anyone have a recipe on how to sautee vegetables to get that gourmet taste.

Because of turn-over ratio at most restaurants they blanch the veggies (pre-cook) for easy reheat or saute. Blanching holds the flavors and the color in. Krorr brand has a veggie seasoning when added to butter, for the saute process, gives the veggies a great flavor. Check in the spice isle of the market and see if they carry it, Enjoy

Roasted veggies are the best. Roasting intensifies flavors. It's an easy way to bring out the natural sweetness and get the most flavor from fresh vegetables. Roasting also helps limit added fat. All that's needed is a drizzle of olive oil to keep the vegetables from sticking to the pan.

There are many vegetables and vegetarian dishes that, if done right (and most restaurants don't do them right), actually taste delicious.

I would recommend going to such sites as Culinary Chef at http://www.culinarychef.com for many delicious vegetables dishes, and even full menus.

Enjoy!
