if you like a fresh one (salsa fresca) finely chop 1 onion, 2 jalapenos, cilantro, 1 mango, 2 large cloves garlic, salt to taste.

you can substitute tomatoes for the mango.

if you like a green cooked one, boil a pot of tomatillos with 4 or 5 jalapenos and coarsely cut up onions. when everything is soft, drain, and put the stuff into the blender with fresh cilantro, and blend until smooth. this one is fantastic on fish, eggs, any meats, and in quesadillas.

JALAPENO SALSA

2 or 3 lg. tomatoes (or 10 sm.)
1 med. size onion, diced
2 cloves garlic, diced fine
Salt to taste
10-12 fresh jalapenos (med. size)
1/2 c. water

Put in blender: garlic, onions, water and jalapenos. Then put in dish and add tomatoes and salt. Chill and serve fresh.

jalepenos tomatos cilantro avocado onions and garlic 1/4 of mango to add taste if you dont want tamatoes pepper but a little bit if you want cheese put it in there and it will make it good with tostitos
