stepless shafts tend to be a bit thicker so they are a lot easier to control but they can slow down your swing a bit.

stepped shafts, you have less controlbut you can get them around a bit quicker. they aren't as good of a quality as the stepless though (so that fast and out-of-control swing leads to a bad shot and broken club =P)

i think stepless is the way to go

Depends on your swing and where the steps are, they use them to make different bend points to do different things. The best thing to do is to try them out to see what works best for you
