cook 2 ham hocks and 2quarts of water in a pressure pot for 25 minutes.
wash the greens then break them in half and drop them into the boiling ham hock water.
add a table spoon of sugar.
put the lid on, and let the pressure build up until it "sings" then turn it off.
when it stops "singing" the greens are ready to eat.

Collard Greens
Serves 4
3 ounces slab bacon, cut into 1/4-inch pieces
1 medium onion, thinly sliced
2 tablespoons olive oil
Coarse salt and freshly ground pepper
Splash red wine vinegar
1 pound collard greens, trimmed and cut into 3-inch pieces
1 3/4 cups homemade or low sodium canned chicken stock
1. In a large straight-sided skillet, combine the bacon, onion, and oil over medium heat. Cook, stirring occasionally, until onions are translucent and bacon renders some of its fat, about 3 minutes. Season with salt and pepper. Add the vinegar, and cook until it evaporates, about 30 seconds.
2. Add the collard greens and chicken stock. Bring liquid to a simmer, stirring occasionally. Cover, and cook 15 minutes.

Here is how I prepare collard greens-India ( indian subcontinent )
Step 1) Boil Collard greens in pressure cooker or just boil for 2,3 hours in an open pan. Then grind them in the mixer. Keep aside.
Step 2) In a seperate pan, put 1 tsp butter + minced 1/2 onion(small) and saute till golden brown. Add 2tsp of tomato(crushed) + salt to taste + 1/2 green chilli(if u like spicy food !).
Now mix the 2 mixtures( step 1 + step 2 )
Serve hot with tortillas or fresh bread.

Black eyed beans. Boil in pressure cooker / covered pan for 2 hrs or till completely done.
Again same procedure for suate : butter + onions +crushed tomato + salt + red chilli powder ( instead ). You don;t want green chillies to be floating in the dish!
Mix the 2 and garnish this dish with fresh parsley or cilantro/coriander leaves.
Enjoy hot with rice or fresh bread!

Boil the greens until they are tender. Fry fat back or bacon. When greens are tender sautee them in the leftover grease. Serve with pintos and yellow unsweetened cornbread. Use apple cider vinegar to top the greens. Add a big ol' glass of iced tea and you got yer'self a mighty handsome supper.

Buy the bagged all ready washed greens. Use salt pork, a turkey leg and ham. Onions, celery, and a beef boulion cube, salt and pepper, and cut all ingrdients together until the greens are tender.

i dont no bout black-eyed peas but definitely buy glory greens they r @ every grocery store n u can buy them n da bag or can so check by da salads n da fresh produce section or can goods section 4 glory greens cuz my sis fixed dem once n i been hooked every since n dat was early dis summer
