I like BH & G because it has pictures (and I'm a picture kind of guy) and it lays flat or you can even take the page out of the book.
On the other hand, Joy of Cooking is like the Bible of cooking. It is very thorough and covers everything that you could ever even think up.
I have all three and also over 150 other cookbooks. I use the BH & G for things like cookies. My wife is a much less experienced cook, and this is her favorite. I get out the Joy of Coking when I need accurate reference info like doneness temperatures, how to roast a goose, how to filet a fish, etc.
If you're an inexperienced cook, go with the BH & G. If you're an experienced cook, go with the Joy of Cooking.

I just purchased as a gift:
The America's Test Kitchen Family Cookbook - fm The the Editors At America's Test Kitchen
The latter is the more general. (Savory & Sweet)
Both are actually put out by the same group.
Why ?
-I've watched a couple of their TV shows. Liked their approach (they test recipes amongst large staff)
I like the book's-
-Equipment / Ingredient evaluation
-Cooking tips / hints
-Recipes
Recipes are a personal choice, but give these a look on your next bookstore visit.

Out of the 3 you listed, Betty Crocker is the best. It totally helps with everything that you need. Outside of the three, I'd reccomend Mark Bittman's How to Cook Everything, it truly is the best cookbook that I've found!

I love my Betty C., and my Better Homes both I took them with me when I moved out for college (my mom didn't use them). I have had them for almost 10 years and they are older than me but I use them all of the time. My newest fav has to be the Hershey's cook book!!! It is full of easy ,delicious recipes.

My favorite is the Pillsbury Annual Recipes 2006. I like it because it has recipes that were made by regular people like me and you. The recipes are easy to read and prepare. No fancy ingredients and wholesome too.

I like the joy of cooking the best. easy to read, well balanced with recepies, good variaty and the recepies work even when you adjust the quantities adn they are easy to modify.
