i bought champian to celibrate the new year but i want to open it now i live in central time zone i like celibrating new yorks new year will it still be blubble by new years ?

jettalady, Go ahead and open your wine now. It will still be bubbly at New Years but it will have lost some of its sharpness (CO2). Be sure to replace the cork the best you can and keep the wine cold this will help keep the wine stable. Without the cork it will go flat soon. Just remember the longer it is open the more it will loose its fizz. Advise: Tease yourself and wait until 12. Happy New Year!

Do not open champagne until you are about to drink it or the bubbles are all gone. Leftover champagne is good in the morning with orange juice.
