ever heard of pecan pie? Same recipe just use walnuts instead, practically tastes the same.

Candied Walnuts
INGREDIENTS
1 pound walnut halves
1 cup white sugar
2 teaspoons ground cinnamon
1/4 teaspoon salt
6 tablespoons milk
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Spread nuts in a single layer over a baking sheet. Roast for approximately 8 to 10 minutes, or until the nuts start to turn brown and the smell of roasting nuts fills the kitchen.
Stir together sugar, cinnamon, salt, and milk in a medium saucepan. Cook over medium-high heat for 8 minutes, or until the mixture reaches the soft ball stage of 236 degrees F (113 degrees C). Remove from heat, and stir in vanilla immediately. .
Add walnuts to sugar syrup, and stir to coat well. Spoon nuts onto waxed paper, and immediately separate nuts with a fork. Cool, and store in airtight containers.

Waldorf Salad Recipe
This salad is named after the Waldorf-Astoria Hotel in New York City where it was created.
2 firm ripe crisp tart green apples
1 firm ripe crisp sweet red apple
1 tablespoon of lemon juice
1 cup of sliced celery
½ cup of coarsely chopped walnuts
½ cup of mayonnaise
1½ teaspoons of honey (to taste)
Iceberg or Bibb lettuce leaves
Core and quarter the apples leaving the skin on (unless it is tough). Slice thinly into a bowl and toss with the lemon juice to coat. Add the celery and walnuts. Cover and chill. Mix the mayonnaise and honey (if desired) together until smooth, add to the apple mixture, and toss. Serve on a bed of lettuce.

I just made oatmeal cookies Friday with walnuts in them. Yum! Use them on top of your breakfast cereal- vewwy good and nutritious. A friend of mine used them in a layered dessert that she brought to my house. It had a walnut/cookie base, cream cheese, and pistacchio pudding on top. (see recipe at mcgees.com) It was delicious!!! I put them on waxed paper and pour melted chocolate on them, too. Also extremely goooood!!!
