Everyplace I go to on Google says to add sugar or brown sugar or honey. I tried these and I hate that sweet taste it leaves. How else can I reduce the acid taste?

add some shredded carrots
the sugar out of the carrots helps cut the acidity without making it sweet

Add just a small amount of sugar.

The acidity in the sauce is likely due to the amount of time you have cooked and concentrated the sauce. Tomatoes in raw form have a small amount of acidity. When you cook them down their flavor and acidity level concentrates as the water is evaporated from the sauce.

You have another option of trying to reduce the amount of cooking time for the sauce

If you are making it from scratch, maybe cut back on how much tomato paste you are using, if you use that. Another trick that will make it creamier tasting is to mix in some cream cheese, either plain or some herb and garlic. That tastes really good and will tame down the acidiness.

I was going to suggest brown sugar too ... pity it doesn't work for you. Maybe you should try altering the amount and/or type of tomatoes you use ... try using tomato paste instead of so many fresh tomatoes ... experiment with a pinch of cumin or oregano ... add some meat stock or a meat stock cube ... a touch of frozen orange juice concentrate ... use more Parmesan when you're finishing it off.

That's what I'd try, though I've no instinct as to which would work best.

How much sugar are you putting in?????

1 teaspoon works fine to cut back on the acidy taste from the tomatoes, and shouldn't leave a sugary taste behind.

Try acid=free tomatoes ... I find plum tomatoes to be less acid, and yellow tomatoes are better than plum.

Cook your sauce longer and a little Burgandy wine give it body and good hearty flavor. Forget the sugar, who wants sweet sauce.

cook it only until it is just to your taste
it doesnt matter what the recipe says
a long cooked sauce is acid
a quick sauce is fresh and sweet

try to add instant coffee about a teaspoon you will not taste the coffee and stir it in

Don`t add as much brown sugar.Add slowly till it tastes right.
