The apostle Paul was not considered one of the twelve. Matthias was the replacement for Judas. The apostles chose Matthias under the influence of holy spirit. Acts 1:15-26

Christ chose the original 12 Disciples. After Judas' death the 11 remaining chose a Replacement. Christ followed this by calliing Saul of Tarsus. Apostle generall refers to those after Christ resurection so it depends on perspective wether you include Judas. If you do Christ chose 13.

This number reflects the Hebrew Lunar Calendar established for the worship Of the Great Moon God Yahweh.
The representation of the betrayal by Judas and his rejection is the rejection of the Lunar calendar and adoption of the 12 month Solar calendar. (the symbolism of the 30 pieces of silver representing the Solar month instead of the 28 day lunar month should be noticed here)
This coincides with the enforcement of Roman rule (Sun worshippers) over the pagan Hebrew religion (Moon worshippers) after the Jewish war that was won by Vespasian and his son Titus.

I think 17. Twelve men, 5 women.

EDIT: Well so far what I'm looking up says I'm half right. There were 17 apostles total (including those who replaced other apostles)...but I know he had female apsotles too such as Mary Mag.

EDIT: OK, I found three of them "From the beginning, Jewish women disciples, including Mary Magdalene, Joanna, and Susanna, had accompanied Jesus during his ministry and supported him out of their private means (Luke 8:1-3)"
