INGREDIENTS
1 pound dry black-eyed peas
water
2 cups chopped cooked ham
salt and pepper to taste
1 pinch garlic powder
2 onions, diced
1 (14.5 ounce) can whole tomatoes
DIRECTIONS
Place black-eyed peas in 8 quart pot. Add enough water to fill pot 3/4 full. Stir in ham and diced onions, and season with salt, pepper, and garlic powder. Place tomatoes in a blender or food processor, and blend until the tomatoes are liquefied. Add tomatoes to pot. Bring all ingredients to boil. Cover the pot, and simmer on low heat for 2 1/2 to 3 hours, or until the peas are tender

Every family will have their own traditions. Mine is a very simple recipe (which I highly recommend for the first-timer) and is unbelievably yummy.
Ingredients; black-eyed peas, fat back (or other seasoning pork such as bacon, hog jowls, etc), onion, salt, pepper. Serve over rice. Note: if for New Year's Day, the pork seasoning MUST be hog jowls (which are akin to bacon except that it comes from the jowls -or cheek).
Prep; 1) if the peas were dried, then they should be soaked (as specified on back of package). 2) drain water, then add fresh water to cover peas and bring to boil with all the other ingredients. 3) reduce heat and simmer until the peas are tender (several hours if peas were dried, an hour or so if the peas were fresh or frozen, 30 minutes if the peas were from a can).
It is served over rice.
Note: It is part of our family's tradition that we must eat this dish on New Year's day. The peas symbolize peace, the jowls stand for health (Hog jowls), and the rice stands for riches. Also traditionally, we all get together to eat this dish as a family -so the main Matriarch usually cooks the dish and everyone goes to her house.

Wash peas and soak overnight or at least 5 hrs. in cold water. Drain. Put peas in large pot with 2 qts. water. Add ham bone or bacon. Simmer for about 2 hrs. or until peas are tender. Add water if needed while cooking.
make some for new years. serve with ham, cornbread and collard greens. said to bring good luck. had mine last year and it's been a pretty good year, all in all. happy new year.

Hoppin' John - Black eyed peas are good luck for the new year!
1 pound pork sausage, sauteed with 2 cups chopped onions, drained
2 cups or more low-sodium chicken broth
1 cup white rice
2 cans (16 ounces each) blackeyed peas
Saute sausage and onions and drain. Add broth, rice, and blackeyed peas. Cook onlow, simmering for at least 1 hour. Serve with cornbread.

Frozen/Dried/canned? I am using frozen peas for New Years - they don't get quite as mushy as dried or canned.
Frozen peas will have the directions on the package - just make sure you add some pork to the cooking liquid (bacon, ham, fat back - whatever you choose). Don't forget the salt - they need salt.
Dried peas must be soaked overnight or use the quick soak method (boil for 2 minutes then take pot off of stove cover with lid and let stand for one hour - then peas will be ready for cooking - directions on package). Once again add some pork for seasoning - and don't forget the salt!
Canned peas - I always drain the liquid off of canned peas and rinse with water to get rid of the canned taste. You then will add your own fresh cooking water, pork seasoning and any salt or pepper if needed. You will only have to heat these up and maybe simmer for a short bit for them to absorb pork seasoning.
Add a pod of hot pepper to any of these pea cooking methods for a little bit of spiciness!

I just washed 1 cup of the dried beans, covered them with 2" of water, brought them to a boil, and boiled for 5 minutes. Stuck a lid on it and took them off the heat. I have to drain them in about an hour.
I'm using my recipe from last year for Hoppin John, it's on epicurious.com. Search for a Hoppin John recipe with kielbasa. That's the one I use. It's also really easy.

Go to a seed store and buy some black-eyed pea seeds, plant them in your garden, feed, water and watch them grow. Harvest according to directions.
OR..
Buy by the can at your grocery store and follow the directions.

Master gives seed. I hook up Lucy the mule, plow field, plant seed, wait around 60 days, pick peas, give to mammy to cook wid collards, hog jowl and coon bread after soaking overnight in water. She cook in fireplace for 2 hours.

The third recipe sounds good but you also can use ham bone, ham hocks, or bacon. Also you can make them without the tomatoes, my husband likes them without. You can also mix speckled or plain butter beans, found in the frozen food section. That makes my husband really happy!

Soak them in cold water an hour or 2. boil them in water till tender.Now you can eat them as salad by adding lemon,oil and small pieces of tomatoes, cucumbers and or green pepper. Or you can prepare a tomato sauce by sauteing chopped onions and meat pieces(optional), then add tomato paste and water. This can be eaten with rice.
