Saute an onion and garlic in some butter until soft, but not brown ( on medium low heat). Add a bit of white wine (or chicken broth) and salt and pepper. Add the peeled and deveined shrimp, cooking until the shrimp are pink. Remove the shrimp and set them aside. To the pan, add cream or evaporated milk and Parmesan cheese. Continue cooking until the sauce is thickened and add the shrimp back to the pan. Serve over pasta or rice.

Shrimp and Grapefruit Spinach Salad

Serves 4; Prep time: 40 minutes; Total time: 40 minutes
Orange slices are a common addition to spinach salad, but grapefruit is also delicious.

3 pink grapefruit

3 tablespoons wine vinegar

2 teaspoons Dijon mustard

Salt and pepper

1/2 cup plus 1 tablespoon vegetable oil

1 1/2 pounds large shrimp, peeled and deveined

1 1/2 pounds spinach, stems trimmed and leaves washed well (about 3 1/2 quarts)

1/2 red onion, thinly sliced

1. With a sharp knife, peel the grapefruit, removing all the bitter white pith. Slice about 3/8 inch thick.

2. In a large bowl, whisk together the vinegar, mustard, and 1/8 teaspoon each salt and pepper. Drizzle in 1/2 cup of the oil, whisking to combine.

3. Season the shrimp with 1/2 teaspoon salt and 1/8 teaspoon pepper. In a large nonstick skillet, heat the remaining tablespoon oil over medium heat. Add the shrimp, and cook, turning once, until pink, about 3 minutes per side.

4. Add the grapefruit, cooked shrimp, spinach, and onion to the vinaigrette in the large bowl. Toss well. Serve at once.

you can add very thin noodles...that would be nice. You can add butter and maybe a little garlic to the noodles or just keep them plain.

I usually butter my shrimp and fry it in a pan until it is lightly brown. You can fry it along with some vegetables or even some pineapple would be nice. You can also add some steak tips or some chicken to it all. Even just plain old steak and shrimp is good together but when cooking with shrimp its almost a fool proof technique to have some kind of sauce with it. Alfredo works, spciy sauces like salsa or pico de galla are good.

You must be a good cook, I would be panic stricken by now. Killer twice baked potatoes sound good, I might try roast pork to go with it. I would not get too fancy with it, just one cooked to perfection rather than loaded with spices would be good. A lovely veggie like some broccoli or asparagas, again a simple recipe or just plain. Do you bake? How about some homemade rolls? Does she like fruit? Check out the deli for already cut up fruit. And I would splurge just a bit on dessert. Make something homey, comforting, rich. Cheesecake pie? Homemade icecream pie? Cobbler?

shrimp pasta is always a good one, just cook your pasta and use a alfredo sauce and then add small pieces of shrimp and some chicken if you like.
