Hi,

I'm making some hash brown potatoes for a new year's brunch. I'm trying to decide whether to peel them or not. I was thinking they could be good with the skin on. What do people think?

Peel Them -

They are slightly healthier with the peel, and you may want to try them unpeeled one day.

However, for a brunch - it's all about the visual
If your guests are not accustomed to having peel in hash-browns, they are likely to avoid them.
Unless your watching them, and know you contributed the dish to the brunch. Then they might be reluctant eaters of your dish.

I've had fried potato wedges with the skins on, and they were good. However, they were oven-baked and didn't require the same amount of turning that hash browns do in order to brown evenly. I'm wondering if the peels will come off and/or taste funky.

I think I'd peel and dice those taters, toss in some chopped onion and green or red peppers, and fry 'em up nice and golden brown.

I have the best recipe for hashbrowns. If you are using russet potatoes, I think they are better peeled. If you use red potatoes, you can leave the skin on. Wash the potatoes, cut into chunks and grate them using a food processor. Pour the grated potatoes into cold water, swish them around to get all of the starch off. Put in a strainer and drain out all of the water. Take handfuls of the grated potatoes and squeeze all of the water out that you can and put it in a bowl. Add salt and pepper, garlic & onion powder, about 1/4 cup of flour and a beaten egg. Mix together well and drop by large spoonfuls into hot oil. Fry both sides until golden. Enjoy!

Most potatos are good with skin on, and of course that's where the best vitamins hide, but for mashed or hashed, you're better off peeling the spud.

I would leaven the peels on just make sure you wash them good soak them in cold water for 5 mins to make sure all the dirt is off of them .

Peel them. I don't eat the skins and I don't know anyone who does either.

No i dont think they wouldbe good with the skin on them i woud just peel them off and make them like that.. but hey im not the one eating them and making them

I love peels on. If I'm going for something more formal (I'm kindof a country cook) I'll peel.

I personally leave the skins on mine... I wash them thoroughly and make sure there are no bad spots in them before grating. The skin of the potato has many vitamins in it and is good for you. I also make my own french fries and leave the skin on them as well. happy cooking.
