You have to find someone else!! Think about if and when you were married. You would have to cook two meals each night, one vegi for you and another with meat for him and few relationships could last long that way.

He grew up that way and the meat and potatoes are filling so trying to change him shouldn't be your objective but I see no reason why you cannot introduce him to vegetarian meals that are good tasting and filling and you never know he may choose to change on his own but in either case it is a matter of preference. if you really care about HIM then you wont try to change him. You probably do some things that he doesnt like, thats the beauty of free will. You cant change someone, they have to want to change...
