Peanut Satay Sauce
1x 100 g pack natural roasted peanuts
1½ tablespoons groundnut oil
3 shallots, peeled and finely chopped
1½-2 red chillies, deseeded and chopped
1 level teaspoon fresh ginger root, grated
2 cloves garlic, crushed
2 tablespoons lime juice
1½ tablespoons Japanese soy sauce
1 level tablespoon light soft brown sugar
1 level tablespoon coriander leaves
heat the groundnut oil in a frying pan and, over a medium heat, soften the shallots for about 3 minutes. Then add the chillies, ginger and garlic and fry these for a further 1½ minutes. Next, add the peanuts and toss them around for about 1½ minutes. After that, remove the pan from the heat and allow everything to cool. As soon as it's cool, tip everything into a food processor with the rest of the sauce ingredients and 3 tablespoons water, and whiz until roughly chopped, but do be careful not to overprocess, as the sauce needs to have some texture.

Ingredients
100ml/3½fl oz vegetable oil
225g/8oz peanuts
4 shallots, chopped
2 cloves garlic, chopped
1 tsp shrimp paste (blachan)
1 small red chilli, chopped
pinch chilli powder
1 tsp brown sugar
1 tbsp dark soy sauce
400ml/14½fl oz water
1 lemon, juice only
salt, to taste
Method
1. To make the sauce, heat the oil in a pan or wok and stir fry the peanuts until golden. Place in a food processor and blend until smooth.
2. Fry the shallot, garlic and shrimp paste for a few seconds. Add the chopped chilli, the chilli powder, sugar, soy and water. Bring to the boil.
3. Add the blended peanuts and simmer for 8-10 minutes until thickened. Add the lemon juice and salt, to taste, if required

Satay of Beef with Peanut Sauce
While the beef pairs nicely with the peanut sauce, lamb or chicken are excellent substitutions.
Makes 8 servings
Preparation time: 45 minutes
Ingredients:
bamboo skewers, 8-inch, as needed
3 pounds top round of beef or beef flank, cut 1 x 5 inches and thinly sliced
Marinade:
4 teaspoons ginger, finely chopped
8 garlic cloves, minced
1 teaspoon crushed red pepper flakes
2 1/2 tablespoons curry powder
2 tablespoons honey
1/2 cup fish sauce
1/2 cup soy sauce
Peanut Sauce:
1 1/2 teaspoons peanut oil
1 1/2 teaspoons garlic, minced
1 teaspoon crushed red pepper flakes
1/4 cup coconut milk
2 tablespoons lemon juice
1/2 cup peanut butter
1 tablespoon soy sauce
1/4 cup water
Preparation:
Soak skewers in water while you prepare the marinade. Combine the beef with the marinade ingredients in a zipper-lock bag and seal. Gently toss the beef in the bag with the marinade until coated evenly. Allow the meat to marinate for 30 minutes. (You may marinate meat overnight, if desired)
While the beef is marinating, combine the ingredients for the Peanut Sauce in a small saucepan and bring to a slow boil.
Simmer 4 to 5 minutes, adjusting consistency with more water or peanut butter as needed and adjusting seasoning as needed.
Thread a piece of the marinated beef on each skewer. Grill or broil the skewered meat, cooking about 3 to 4 minutes per side.
Serve with the warm Peanut Sauce.

I can tell you how I make mine, but I have to apologize ahead of time for not having exact measurements. I kind of mess around with it, adding more peanut butter, or straining out water, until it's the right consistency.
Boil some water--I guess start with 2 cups? When it's boiled, add peanut butter and mix it around. I like to use peanut butter w/no sugar, but it's up to you. Mix it until the two are completely mixed and it's a pretty thick consistency. Add more pb or strain out some water if you need to. Then, throw in some soy sauce to taste and to consistency--when done w/soy the consistency should be thick enough to dip but not so thick as to be goopy. :) Finally, I add some cayenne pepper, a little salt, and a tad bit of chili powder to taste. You could also add some garlic if you wanted to before you began (sautee it and throw it in toward the end). Hope that helps! It's very fast. Very good. I use it in stir fry too.

If your lazy like me but want to impress either buy a lloyd grossman singapore satay sauce in a jar or simply cook peanut butter with your meat and add coconut milk and sweet chilli sauce!
granted not the healthiest way but does the job!

I prefer both fruits and fruit and vegetables better, however they look and taste. You desire a little of both.
