I really enjoy eating chiken and fish with rice daily for my dinner, after learning that white rice is really not all that healthy with the starch and sugars, I tried brown rice, but honestly do not care for it. Is there a rice that is tasty like white but not as unhealthy. (I am not into any sort of cooking extravaganza, or recipes i want to KEEP IT SIMPLE..I just bake the chicken or fish with some spice (NO SALT) and make the rice with the veggies in it and maybe some onion, garlic and spices, I am cooking this meal for one person only, me.

Brown rice can be very good.
First, you want to careful that you're not using rancid rice. Brown rice still has the hull which contains oils that turn rancid when stored for too long. Use the smell test, if the uncooked rice has a rancid smell don't use it. It might even have gone bad before you bought it if the store doesn't sell a lot of it.
If your problem is not with the texture you might want to try substituting chicken stock for water in your recipe. Even my picky kids like it that way.
The suggestion made above to mix some white rice with the brown works well too, even though the white be a little overcooked before the brown is done.
My favorite long grained whites are Basmati and Jasmine. For short grains I prefer the Japanese varietals, but they are expensive and you won't likely find them in the typical American supermarket.

No worries on the typing. At first I always added salty stuff to my brown rice. Low sodium soy sauce in a pinch (I used to eat a lot of brown rice when I was really health conscious). After I branched out I used strong flavors like sauteed garlic and onions then sautee shrimp in that or sometimes just chicken and even eggs (like a friend rice). Veggies galore, especially carrot/pea combo. Raw scallions on top always do a great trick because of the rawness. I love brown rice plain now and got my kids to sort of not like white as much (big challenge there) but bottom line is, add healthy stuff and you will eventually feel so dang good about what you are eating that you won't mind any unusual taste :-)

I had the same problem until I found this recipe for cooking brown rice that made it taste better and by the way white rice is also good cooked this way!
1 tbl raw onion
1 tbl ' celery
1 tbl green pepper Optional
2 cups brown rice
2 1/2 cups of chicken or beef broth
2 tbl oil
1/2 tsp salt/pepper/garlic
mix and put in bread pan cover with aluminum foil tightly and bake at 350 for 1 hour and 10 minutes.
You'll end up with about four cups of good tasting brown rice

It is true that white rice doesn't have as much nutritional benefit as brown rice, but it's not unhealthy. The carbohydrates just metabolize quicker than in brown rice and that really is only a problem if you are a diabetic, or if you are eating very large quantities of carbs. With all that said, some brands of brown rice are a little softer and fluffier, which may be more to your taste. The microwavable brands, like Uncle Bens, aren't too bad. I really prefer Jasmine rice, myself. It's a long grain, fragrant rice that is very tasty. If you can't find a brown rice you like, just eat white rice and keep your portions under control. :)

Anything is better than brown rice. I don't like the taste either. I recommend you try risotto. Risotto is a traditional Italian dish made with a suitable variety of rice such as Arborio, Carnaroli or Vialone Nano. It can very easily be found at your grocery store and you can cook it with chicken stock or water. I've even used champagne.
Another option is couscous. Sounds like "coose, coose". This will probably be much easier and simple. You can buy it in packet. I sometimes put a little salsa/tomoto sauce in it after cooking to give it a little more flavour and to give it more texture.
I hope these ideas work for you. Your dinner will be tasty and you'll experience new flavours.

basamati rice is light and tasty, i give u good way of cooking rice, first fry it with onion and oil and fry the rice itself then add boiled water on high temperature when all water goes, reduce the temperature and then turn it off, do not forget the salt and spice u like.,

Wild rice is good ( it is not technically a rice but a seed ) and is much more interesting than brown rice. If you find it, red rice is wonderful, but it is a bit pricey.

Try the following substitutes for rice:
Wild Rice (pretty...use for entertaining. Get from any market)
Spelt (HIGH fiber, wheat, get from health food store)
Barley (Usually used in soup...same as pearl barley...market)
Quinoa (Similar to couscous, health food store)
Whole Wheat Cous Cous (tiny carbohydrate grains, great in salads, market)
All of the above have high fiber contents and protein.
