Meat should be at room temp before roasting...
(approx 2 pound tri tip) Season with coarse salt, fresh black pepper and garlic powder. Place , fat side up, on a rack in a shallow roasting pan. Roast at 450°F for 20 minutes then begin checking the internal temp. remove at 120°F for rare, 130°F for medium rare etc.
Let rest for 5-15 minutes, loosley covered with foil, before cutting accross the grain into thin slices.

Make a nice pan sauce from the drippings. YUM

love tri tip! yummy...wrap good in foil with whatever seasoning, bake at about 350 for an hour to hour 1/2...also very good on bbq
