I don't know about that one, but here is one that I use, (I usually end up doubling it):
- 1 lb ground beef or ground turkey
- 1 envelope taco seasoning
- 1 envelope Hidden Valley Ranch salad dressing mix
- 1 small tub, (4 oz) of Cottage Cheese (I use small curd, but either one is okay)
- bag of your favorite tortilla chips
~ Optional ~
- lettuce
- shredded cheddar cheese, (either 4 or 8 oz, depending on how much cheese you like; I also prefer the finely shredded mexican or taco cheese to the regular shredded cheddar)
- onion, sliced
- tomato, sliced
- any other toppings that you would like on tacos
Brown the meat and drain; mix in taco seasoning according to the directions on the envelope. Set aside.
Beat together Hidden Valley Ranch mix and cottage cheese until smooth, (food processor works the best, but a regular mixer or wire whip will work okay too).
Layer the meat; cottage cheese mixture; lettuce; cheese; and other toppings in a container of your choice. I usually double this and use a 9 x 13 cake pan, but it doesn't really matter what you put it in. Just remember, the bigger the container, the thinner the layers will be. Refrigerate until it's time to eat.
** For those who hate cottage cheese **
I can't stand cottage cheese and neither can my kids. They didn't know that cottage cheese was in this until after they tasted it and told me how much they liked it.
Another thing that I do is to make it with onions and tomatos on 1/2 of it because some of my kids don't like them.
Have a happy and safe New Year!
