Macadamia Nut Crusted Mahi Mahi
Prep Time: 10 minutes
Inactive Prep Time: 10 minutes
Cook Time: 15 minutes
Yield: 4 servings
5 ounces (about 1 1/4 cups) coarsely ground, roasted macadamia nuts
1/2 cup panko (Japanese-style bread crumbs)
2 tablespoons all-purpose flour
1/4 cup butter, melted
Vegetable oil, for brushing foil
4 (6 to 8-ounce) mahi mahi fillets
Kosher salt and pepper
2 tablespoons coconut milk
Preheat oven to 425 degrees F. In a medium bowl, stir together the nuts, panko, flour, and butter. Set aside.
Place a piece of aluminum foil on a baking sheet and brush it liberally with vegetable oil. Place the mahi mahi on the foil and sprinkle each fillet with salt and pepper on both sides. Bake for 5 minutes. Remove from the oven and brush each fillet with the coconut milk. Divide the nut mixture among the tops of the 4 fillets, patting the mixture to spread and adhere to the fillets. Return to the oven and bake for 5 to 10 minutes, or until the crust is golden brown.
Remove from the oven and allow to stand 10 minutes before serving.

Made my fish and shrimp parcels to impress the inlaws. Guess what? Mission Impossible accomplished!
What you need, per person:
100gr of fish (I use a local fish called Kingklip but Cob or hake works fine too)
Handful (or two) of small pink shrimp
Handful of Cherry tomatoes
Thyme and Rosemary (fresh)
Onion rings ( Red Onion)
(2 table spoons) Olive oil
A squeeze of lemon juice
Small teaspoon of Garlic
Salt, pepper
tin foil
Preheat oven to 220 degrees Celsius.
Take a large piece of tin foil ( A4 size) and a large size bowl. Lay the tin foil in the bowl. Put the fish in tin foil covered bowl. Make sure tinfoil does not tear.
Add the shrimp, tomatoes and onion rings.
Make a mixture of the olive oil, garlic and lemon juice and pour it over the fish.
Add thyme and rosemary ( fresh). Add salt / pepper to taste.
Fold the tinfoil, leaving no openings.
Put parcels in oven and cook for 15 minutes

from the list i would rate the mahi mahi the best.
but for me, last week, i made sea bass fillets, simply grilled, served on braised fennel, alongside roasted root veg(sweet potato,carrot,onion and celeriac) tossed in olive oil and fennel seeds and seasoning.
garnished the sea bass with crabmeat mixed with the tops of the fennel and some thai red curry paste, just a little mind you.
best fish dish i have cooked this year.....

Not sure it's all that impressive but fish pie made with fillets of cod, mixed with home made parsley sauce, chopped up hard boiled egg, with mashed potato on top, topped with cheese. Served with veg!

Flounder Turbons Bonne Femme
3 lbs Flounder Filet
4 Tbs mined Shallots
2 Tbs mined garlic
2/3 cup clarified butter
1/3 cup white wine
lemon juice to taste
paprika and mixed seasoning
Crabmeat filling
1 lb Backfin crabmeat - cleaned
6 pieces fresh bread crustless, ground to crumbs
3/4 cup fine diced celery, sauted
3/4 cup fine diced onion, sauted
1/2 cu small diced pimento
2 eggs
1 tsp whole thyme
1 lemon - squeeze in juice
1 Tbs Dijon mustard
salt & white pepper to taste
1 Fill chicken quarter with crab filling and secure with toothpick
2 Season and flour surface of chicken and sear sides in saute pan with olive oil.
3 When brown, place in baking pan and bake in preheated oven at 400 degrees for 40 minutes.
4 Procedure :
5 Portion flounder into strips and place skin side up
6 Apply stuffing and roll up into turbons
7 Place turbons upright and apply flavoring garnoch
8 Cover and "steam" in oven
9 oz white wine sauce
10 egg yolks
11 cup of sliced mushrooms, sauted

Shark. My husband caught one standing on the beach with a pole last winter. After he cleaned it, he slathered it in butter and salt and pepper, wrapped it in foil and grilled it...yummmm...tasted like lobster..probably from the butter but had a chicken texture...best fish dish ever

I've been known to get compliments on my version of "Shrimp Skampi"...... I just saute the jumbo shrimp in butter , fresh parsley, and fresh garlic, and place them on Angel Hair Pasta, with a side of Garlic Bread, and salad, or Vegeez..... And my kids love it, when I make my Salmon Steaks~ We all love fish, my son, who's 20 now, could eat smoked oysters everyday, if he went to get them everyday..... My youngest daughter too!!! I even love those!! Now, the real deal, that slimes down your throat, (I heard , they do, anyway..) uh, I dont think I could ever try those, my son's tried them.... And likes those too, but me, I'm too scared I'd get sick, in front of someone, and embarrass the heck out of myself~!!!! HaHa!!!
