Melted butter.
I have also heard that you can replace the oil with equal parts apple sauce (if you are trying to cut out/down the fat).
I have never tried this (but I love the fat, I actually substitute cream for the milk... makes 'em nice and crispy on the outside and light, sweet and cakey on the inside).

The same amount of butter! Plus they will taste better.
