Gold represents the radiance of Heaven; red, divine life. Blue is the color of human life, white is the uncreated essence of God, only used for resurrection and transfiguration of Christ. If you look at Icons of Jesus and Mary: Jesus has a red undergarment with blue outer garment (God became Human) and Mary has a blue undergarment with a red over garment (so that humans could become like God), this is the way the doctrine of deification is taught by iconography.

It doesn't really represent anything - it's just a traditional way to depict Mary. Blue might have seemed a good choice because it is the color of the sky which calls to mind Heaven. Also in ancient times blue mosaics and blue paint were made with ground up lapis lazuli. Lapis lazuli is a rare stone that actually comes from Afghanistan. It was precious and expensive and hard to bring to places like Greece and Italy. So in those days, you wouldn't just use blue paint or blue mosaic pieces for just anything - you would use it to depict very special things - like Mary.
