I was given a jar of this stuff and I haven't ever tried it before, what is it good to serve with? Are there any recipe uses for it?

I would suggest serving it with freshly toasted crustini, or you could use bagel chips or pit a chips. It is more of a spread so I like to eat it with toasted bread.

tapenade is fundamentally chopped olives and capers (I useabout 1/4 volume of capers to olives), with some fish (anchovy, small amounr or tuna, larger amount)

I make sure the olives and capers are rinsed if they've been kept in brine and do not use extra salt to season.

I do the whole thing in a food processor ( make sure there are no stones - it b*ggers the machine and puts gritty bits in the tapenade)

Then I add the fish to taste and some garlic. If I buy the olives packed with garlic, I use those. If not, raw cloves, peeled of dry skin, are fine.

It is nice to add some fresh herbs. I love thyme, parsley or basil. I especially like basil if adding sun dried tomatoes packed in oil.

Or you can make a Red Tapenade using sundried tomatoes and serve it in another dish.

The last step is making sure the texture is right by adding olive oil to get a nice dip.

USES

You can use it to dip in crudities - bits of raw veggies.

You can spread it on biscuits ot toast

You can spread it on fillets of fish before cooking - this certainly adds flavour to anything bland

Unwrap cream cheese block, and place on a serving platter. Spoon tapenade over cheese, and sprinkle with walnuts. Serve with French bread, pita, crudite or cracker.
Note
To toast walnuts, heat oven to 350 degrees F (175 degrees C). Place nuts in a single layer on a baking sheet. Bake for 10 minutes, or until lightly browned and fragrant.

Olive Cheese Melts

INGREDIENTS
1 cup black olives, chopped
1/3 cup green onions, chopped
1 1/2 cups shredded Cheddar cheese
1/2 teaspoon curry powder
1/2 cup mayonnaise
1/2 teaspoon salt
8 English muffins, split in half
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
In a medium-size mixing bowl, combine olives, green onions, Cheddar cheese, curry powder, mayonnaise, and salt. Mix well.
Spread mixture on English muffins. Cut the English muffins into fourths. Note: If you want to freeze these, now is the time! Arrange the muffin pieces on a cookie sheet.
Bake at 400 degrees F (200 degrees C) for 10 minutes.

3 cups pitted black olives

Cyndi & I like it as an add to store pizza! A little bit goes a long way, say three tablespoons for a whole pizza, more if you really like it, less if you are unsure!

I use it in savory Toscana style pastas with spicy ingredients, that can handle the addition of the tampenade as a shortcut to my end sauce!
