The Red Shoes: The movie that launched a thousand ballet careers. It's all about living and sacrificing for your art. Gorgeous cinematography, luscious, eye-popping Technicolor.
Seven Brides For Seven Brothers: Think dancing is just for girls? The barn-raising sequence in this film has more testosterone action than a hundred NFL games. The grace and athleticism in this movie is awe-inspiring. There are some lovely ladies in it, too. Don't miss the "Lonesome Polecat" number, either.
An American In Paris: This movie is an extended ballet with some other stuff in it. It's the brainchild of Gene Kelly and choreographer/director/all around genius Stanley Donen. Kelly stars, and his leading lady is French ballerina Leslie Caron. The big number at the end, set to Gershwin's eponymous composition, is a riot of colors and moods, with tributes to the art of Toulouse Lautrec.
Really, any of the Kelly/Donen collaborations from the '50s will be wonderful, like "Singing In the Rain" (Cyd Charisse! Donald O'Connor!), or "It's Always Fair Weather" (tap dancing with trash can lids and roller skates!)
Oh, wait. Got a little carried away there. I gave you more movies WITH dancing, rather than about dancing. Well, there's good stuff there, anyway.

"Center Stage" - awesome movie about teenage ballet dancers in a ballet school, don't remember it having any well known actors tho - but its one of my favorite movies :)
"The Company" - also about ballet dancers, very good movie, stars Neve Campbell
"Billy Elliot" - I didn't really like this movie but it is about a young boy who wants to be a ballet dancer and his family is against it
Also, Dirty Dancing, A Chorus Line, Shall We Dance, and Footlose

Plot Summary for
White Nights (1985)
An expatriate Russian dancer is on a plane forced to land on Soviet territory. He is taken to an apartment in which a black American who has married a Russian woman lives with her. He is to become a dancer for the Bolshoi again, but he wishes to escape, but can he trust the American?
Nikolai Rochenko, a Russian ballet dancer who 8 years ago defected to the West. He is in a plane flying over Russia when all of a sudden, a malfunction forces the plane to land in Russia. The KGB tells everyone that his injuries are so severe that he has to remain confide for a while. But in reality they want him to return to them, so they bring him to his old apartment and an American, Raymond Greenwood, who himself defected to Russia several years ago, is placed there to keep an eye on him. However, Rochenko is not about to give in and is determined to escape. So with help from his former lover, he gets word to the Americans. And even Raymond is started to be disillusioned with Russia, and he has to decide if he is going to do what he was sent to do or help Rochenko.

Red Shoes - very old ballet movie - its a love story based around the creation of the ballet called the red shoes, it's a tear jerker
