I would have to say Raiders of the Lost Ark. The scene where he is looking for the girl in the baskets and runs into the huge guy with the sword, looks at him wield the sword around in hands and the pulls out his gun and shoots him. I was on the floor.

The Last Crusade. Followed very closely (almost tied) by Raiders of the Lost Ark. The Temple of Doom was too dark.

Raiders of the Lost Ark wins, for introducing the Indiana Jones character with a combination of excitement, bravado and humor. Temple of Doom takes itself way too seriously at times, is somewhat child-pandering with the Short Round character, tried to outgross the grossness of the first film (and succeeds, to the detriment of the movie), and, above all else, really bites hard on the 1939 movie Gunga Din for its inspiration (even nicking that films villains, the Thuggee cult). Last Crusade, which I do like a lot, still suffers in comparison to Raiders by virtue of a bland heroine (come on, Marian Ravenwood smokes all and we know this!), slight overlength, villains that are a basic photocopy of the Nazis from the first film (but without Belloq's oily charisma and Toht's perverse sadism), and so forth. Really, if only one film existed in this series, it would have to be Raiders of the Lost Ark, where every important character and trait has been introduced: Sallah and Marcus Brody, snakes and, of course the inimitable Indy himself, replete with bullwhip, fedora and exasperated smile, careening through daredevil situations to John Williams' triumphant music score.
Just the name itself -- Raiders of the Lost Ark -- makes me feel the same sense of childlike awe I felt when I was five years old, seeing it for the first time.

Probably the raiders of the lost ark, I'm looking forward to the 4th but i think George Lucas should stick to star wars and i don't see the point in bringing back Sean Connery, he's not needed.

Raiders of the Lost Ark, without a doubt. First of all, it was the best pure story of the three and it unfolded with childlike glee. It was boundless fun and never took itself too seriously. Also, it was the only one where Harrison Ford was actually the right age to be doing action.
