I would expect that they speak Dutch--since it IS Holland, but probably no problem finding an English or German speaker.

The official language is Dutch. however as there are a lot of foreigners in Amsterdam, not everybody speaks Dutch. Basically in all restaurants, shops, transport, etc people will speak English. Many tourists around need to be served....

The speak Dutch, as it is the capital of the Netherlands. But fortunately for tourists, they all speak English too, many speak German, some speak French and Spanish.

Since there are also emigrants, many speak Turkish and Maroccan. But the official language is Dutch (Nederlands)
