i love to have my ipod set on manual because that just means you can choose the music you want to put on your ipod. i share a computer so i dont want all the music on my computer on my ipod. i set it to manual so i can choose the songs i want. you just drag them from your itunes library to the thing that says its you ipod on itunes when u plug your ipod in. the only thing you have to do is when you want to unplug it from the computer you have to click the eject button which is the gray circle with a white arrow in it(i think thats the symbol)
hope this helps

Select the option "Manually Manage Music," if you are an iTunes 7 User the option is on the iPod general page in the devices menu, if you are an iTunes 6 Or Earlier User it will be in the preferences menu under tools. Go to your library then highlight a song then drag it over the iPod icon then it will have the little circle with the rotating arrows, meaning the song has been sucessfully synced to your iPod.
