Feel free to add as I'm sure I've missed many but I think these actors have all dabbled in comedy, drama, and other genres very successfully...and WELL.
Bruce Willis, Jim Carrey, Robert De Niro, Jack Nicholson, Dustin Hoffman

Bruce Willis is really I think really is only good in action flicks. Jim Carrey, as much as I like him, is too funny for some things. Robert De Niro is pretty versatile but I don't think he was that good in some of his films. I haven't really seen very many movies with Jack Nicholson in it. So I'd have to say Dustin Hoffman is the most versatile actor from the actors you listed.

Since you added him... Robin Williams. Followed, in order, by De Niro, Dustin, Willis, Carrey... then Jack! (love Nicholson, but he never changes in any of his movies! He's always just Jack!)

Robert De Niro and Jack Nicholson definitely. I don't know about how versatile these actores are and if you only wanted just actors, no actresses and maybe its just actors i enjoy in general but Daniel Craig seems to be versatile, Dougray Scott is good too. Audrey Tautou is an interesting actress to see in many different films with much different plots and doing them well. Johnny Depp is incredibly good at so many different roles, great actor.

I'd have to say Johnny Depp. Every role that he plays is a completely different person. It's never Johnny Depp as Ed Wood or Gilbert Grape or Ruaul Duke/Hunter S. Thompson. It's Ed Wood and Gilbert Grape and Ruaul Duke/Hunter S. Thompson. Johnny Depp completely gets lost in his roles and that's just beautiful. I can't think of any other actor who gets so deeply involved with his characters where the audience completely forgets that it's Johnny Depp on the screen. He is today's best and most versatile actor, hands down.

They're all excellent, of course, but Denzel Washington has even done Shakespeare with style and grace, and even though we're all appalled at Mel Gibson for shooting off his mouth when drinking (but haven't we all done that at least once in our lifetime?), the man is a fine actor-action, drama, comedy!
And even though you may not have been around for James Cagney, Jimmy Stewart, Humphrey Bogart, and a few others of that era, you are doing yourself a disservice if you don't rent one or two of their movies to see what acting without special effects is really like!
Cagney was a song-and-dance man who also played gangsters, serious drama, and in comedies. No special effects, just extraordinary talent. And as much as I love certain of today's actors, there are not many (if any) as versatile as Cagney.

Of that list, it's got to be Dustin Hoffman, hands down. The man can do every genre: Tootsie, Rain Man, Midnight Cowboy, Meet the Fockers, Moonlight Mile, etc, etc, etc...
