Symbology is not a specific discipline of study, but as the previous answer notes, one can study symbol and the relationships human beings have with various symbols in anthropology.
I'd like to add that one can also pursue the study of symbol in any department of religious studies.
Most decent universities have a department of anthropology, and most liberal arts colleges (and many universities) have departments of religion (or religious studies, or comparative religion, not to be confused with departments of theology).

Symbology is not a discipline per se, so you won't be able to, say, major in "symbology".
If you want to study the meanings and uses of symbols and how they affect our lives, there are disciplines that you may be interested in. You may want to look into programs in cultural anthropology (the study of culture), literature, or cultural studies. Especially anthropology: In the Eighties, "symbolic anthropology" was all the rage, and cultural anthropologists nowadays still take after their Eighties predecessors (though they don't admit that).
