im sorrry i ment how do crystals form on the ce cream not why

The air in a freezer contains moisture. The air in the ice cream carton also contains moisture, so even if you have an air-tight container, there's still moisture. That moisture condenses on the ice cream and freezes. That's why it tastes so nasty. The ice crystals are contaminated with anything that is in the air of the freezer. Bleck!!!
