There are no more big built singers than there are small built singers. You just notice the bigger one's more because you're distracted by their size.

you have the question wrong. it should be- why are good singers often big built.
because singing [real singing] does not burn a lot of calories.
thus they put on weight.

Actually my experience in the music world is the exact opposite as far as male vocalists. One theory is that smaller guys have more difficulties in competing in athletics so they switched to music or acting or some other performing arts though this isnt true in every case.
