This is called subjec-verb agreement. The subject (what is being discussed) are "the yolk of eggs." Now, the verb is whats being done, in this case, describing. The subject and verbs need to agree on the amount (simply single or multiple). Since you're talking about egg yolks in general, it's multiple. So the correct sentence is, "The yolks of eggs are white." Both yolks and eggs have to be plural and the verb has to agree, "are" instead of "is."

But to boot, egg yolks aren't white....

if eggs is plural, then yolks also has to be plural. and yolks are yellow, not white. and i'm not sure that 'yolks of eggs' is even grammatically correct, i would say 'the egg yolks are yellow.'

First, yolks are yellow. Secondly, if they WERE white, grammatically, it would read "the yolk of eggs IS white". The word "yolk" is singular.

You should say IS white because you are talking about the yolk. OF EGGS is just a prepositional phrase. You could take it out of the sentence and it would still be the yolk is white. So the answer is IS
