They're watching you right NOW!!!! They have microcameras installed on their DVDs. If any attempt is made to copy their DVDs, they microcamera activates. It releases from the DVD and implants itself in your ceiling. Then, the video store can have you arrested at their leisure. Bummer for you, dude!
Just kidding! :) No, they can't tell. It's just a disc. There's nothing that would change on the disc by copying it.

As long as you keep your game face on when you return your movies. If you are a bad liar, then have just put the movies in the outside drop-off. Or you can go with Netflix.
Seriously, there is no way to track someone's activity through DVD's.
