would like to install a v6 or v8 engine in a 1983 rx7. Can this be done?

Yes... There are many kits for the Chevy V8 Swap...

V8 Ford V8 Mopar haven't been done as much...

Why would you want to,with an RX7 bridge ported engine it will produce as much or more horse power nad torque as any V6 or V8.

Yes, Granny's Speed Shop has conversion kits for almost any V6 or V8 engine you could have laying around.
