My sis is doin a project on the temperature affecting an apple's flavor. She needs some information on why temperature affects the flavor of the apple. Plz help.

as far as i know there are certain enzymes bringin abt the reaction of spoilage of apple.The activity of enzymes depend on certain temperature.at low temperature enzymes are denatured and at high temperature they get destroyed.due to this temperature affects apple's flavor.all the best.
