So I know about the old greats -- ella fitz, miles, etc. I'm looking for some recommendations for newer current coffee-shop jazz artists. I do know Madeleine Peyroux already.

Recommend Charlie Hunter. He plays a custom made eight-string guitar. The top three are bass so he is his own bassist. I've seen him play a few times and I really enjoy his unique style.
Also I noticed someone mention the band T.J. Kirk. Hunter was a member (leader?) of that band years ago.

I really think you should hear this album by John Ellis. That's not just my my opinion. Check it out-http://allmusic.com/cg/amg.dll?p=amg&sql=10:51uj6j3371t0

PS- regarding your previous answers...

TJ Kirk is a cover band. They play the music of Thelonious Monk (T), James Brown (J), and Rahsaan Roland Kirk (Kirk). They play funky versions of those songs. It's good, but not what your asking for.

Kenny G is not jazz. Its instrumental pop with sax.

Diana Krall is a good suggestion. Try the Live in Paris album.

Regarding the suggestion just below mine...
John Ellis was the sax player in Charlie Hunter's band, but Ellis left and focuses on his own music (and others).
