My son and I are playing this and I am wanting to know if you have to have all 120 shines to play and beat the bosses in Corona Mountain?

No, you don't need all 120 shines. To access Corona mountain, you need to beat all of the shadow mario chases. This means you can reach corona mountain with a minimum of roughly 50 shines
