I ordered something from Ebay, and had it to ship overnight to me. I would think Overnight would mean overnight no matter what day, right? I read where it's guaranteed, but I've been told I could recieve the package on Monday, instead of tomorrow.

Well not exactly. I used to pack and send parcels for UPS. Unless its an extremely urgent and important item that needs to have special attention, send it 2nd day . Sometimes it will get there just as fast and it's less than 1/4 the price. The US. mail is similar. I've had important papers delivered in person on Sundays. It was unusual also because the mail person was out of uniform.

Grammaticality, G.O.D might want to signify guaranteed in one day delivery. To bypass over the sessions between the letters, on objective might want to or might want to not be meant as disrespectful to the author. i wish not.
