Romero's four films so far are the definitive zombie films. He basically created the genre. There were films about zombies before, but they were always shuffle-around-and-serve-their-master types, not the flesh-eating things we see in films these days.
A great humorous tribute to Romero's work is Shaun of the Dead. Romero liked it so much he had two of the guys who made it appear in a cameo in Land of the Dead.
Another classic humorous zombie film is Dead Alive, by Peter Jackson, the same guy who did the Lord of the Rings trilogy and King Kong. Low-budget, very gory, and very funny.
Undead is also fun in a similar way, though the gore level isn't as intense.
The Resident Evil series, based on a series of video games obviously inspired by Romero's work, is worth a view.
The Return of the Living Dead movies, spun off from Romero's original concept, are fun, but after the first few the quality drops dramatically.
Italy has its own series of zombie films, but the make-up and effects are somewhat disappointing, and the plots generally lack the creativity of Romero and his better imitators.
28 Days Later is NOT a zombie film. They aren't dead, just really, really pissed off. If you're looking for a zombie film, avoid it! It's good for what it is, though.
The Evil Dead movies could be included here, but the creatures from those films are more possessed people/corpses than zombies, at least until you get to the third one. Still, highly recommended if you have a sense of humor.
Also sort-of zombie are the Re-Animator films. The first is good (although it fails to capture the feel of the source material), the second terrible, and the third enjoyable in a cheesy, over-the-top kind of way.

Hope this helps.

I'm NOT a big Zombie fan, but Resident Evil (the first one), and the one where the people are trapped in the mall hiding out from the zombies I liked.

You might want to see if you can find a copy of a film simply titled "Zombie." It's Italian, and I believe it was directed by Lucio Fulci. Any film that's marketed with the slogan "You are what we eat!" is worth seeing.
