Depending on your standby settings, that would be sort of hard to do. Standby would normally stop the harddrive from spinning and put everything into a sleeping mode. The machine wouldn't be doing anything other than keeping the memory active.
You should be able to set your machine to perform the virus scan when system has been inactive for x minutes and also set standby to be inactive for x+5 minutes, for example.

Doing that defeats the purpose of putting the PC into Stand By mode.

That is not possible, when a computer is in standby it's for all intents and purposes, off.

Virus scan cannot scan your computer when its hibernate or standby. but you can schedule it to run when its Idle.
