In some countries (India for example) you are supposed to only wipe with the hand you don't use for eating. So if you eat right-handed like most people, wipe left-handed. In places with adequate hand-washing facilities, this is merely custom, not hygiene.
And in fact, nobody is going to know which hand you use, so please yourself - but DO wash your hands thoroughly when you're finished!

It doesn't rearlly matter which hand you use, just be sure to wipe the hand clean before you eat a sandwich, or burrito.
