Keep the layout simple, don't use too many fonts. Name and contact info at the top, then recent work in reverse chronological order. Follow that up with any special skills, and lastly your educational background.

I don't think there's any "right" answer to this one. What you should do is ask any working actors you know to let you look at their resumes, and see which layout(s) are most impressive to you.
The most important thing is that it should be very CLEARLY laid out. As a director, there's nothing worse than being handed a resume, and having to stare at it for 5 minutes in order to find the information I'm looking for. Don't cram it with nonsense from margin to margin. Be selective. For beginning actors, it's sometimes necessary to list EVERYTHING they've ever done. For more experienced types, this is rarely the case. Use the information that is most likely to impress your auditors.
