never converted direct but you can copy and paste into another document , such as a word doc. If you know this already my apologies, but this is how.
open pdf doc look to tool bar click on the hand /arrow and use mouse right to blackout the text in the pdf doc and click on copy . open word doc and then click mouse right scroll to paste and that should do it

In the pdf document, click on "Select Text" which is in the middle of the toolbar at the top of the doc. Once the text is selected, hit Edit> copy (or Ctrl + C). Open Microsoft word or another word processor, then paste the text (Ctrl + V or Edit>paste). You should now be able to edit very easily.

You can get software to do this, but another way is
Open the pdf document
Ctrl+A
Ctrl+C
Open,say, a new Word document and go to File - Paste Special
Voilá
You'll lose some of the formatting, but the gist is there.

1-to jpeg files
2-to doc or to text file file
select pdf copy to clipboard
open notepad or msword
special type paste select text
3-you may use free softwares
4-Send them to me to convert them for you.

Adobe Acrobat.
Professional version 7.0 will even go to doc.
You can try to get reader to select text and copy to clipboard and plop into another program, but your formatting is lost. This may not be allowed depending on the security set on the document when it was created by the writer.

You can't; its the point of the PDF format. Its to keep documents secure and portable.
