Pizza English Muffins
INGREDIENTS
2 pounds ground beef
1 1/2 pounds bulk pork sausage
1 medium onion, chopped
1 (6 ounce) can tomato paste
1 teaspoon garlic salt
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
3 (12 ounce) packages English muffins, split
3 cups shredded mozzarella cheese
2 cups shredded Cheddar cheese
2 cups shredded Swiss cheese
DIRECTIONS
In a Dutch oven, cook the beef, sausage and onion over medium heat until meat is no longer pink; drain. Stir in the tomato paste, garlic salt, oregano and cayenne. Spread over the cut side of each English muffin. Place on baking sheets. Combine the cheeses; sprinkle over meat mixture.
Freeze for up to 3 months or bake at 350 degrees F for 15-20 minutes or until heated through.

I like to make pasta salad - just cook some pasta, toss it with Italian dressing (oil and vinegar or creamy), then add whatever cheese you have on hand (cubed or grated), and whatever vegetables the kids will eat - chopped tomatoes, cucumbers, shredded carrots, etc. You can add beans or meat for protein. The options are pretty much endless, and it's fun for kids to make themselves - they can pick the pasta shapes and the veggies (if you use frozen, they can cook them themselves in the microwave), drain and rinse the canned beans and the pasta, add the dressing, and grate the cheese/carrots.

My students love to cut veggies and other foods.
A chef salad with ham, turkey and American cheese with lettuce, tomato and any other favorite salad veggies that the children like could be included.
I cut the veggies and meat into smaller sections for the children to cut with plasticwear. Plus, ranch dressing on top.

Turkey Pinwheels are so easy and there is no cooking involved
packaged tortillas, cream cheese, sliced turkey, grated carrots, and your favorite sliced cheese. mix cream cheese with carrots spread on tortillas layer with turkey or ham and sliced cheese then roll up and cut into wedges. kids can make it start to finish and the ingredients most people have on hand

Buy some individual pizza crusts @ the grocery store, plenty of sauce & set out bowls of various toppings so each child can make & decorate their own pizza with whatever toppings they like!!
