They eat all the quorn products but many ready meals include peppers. Need things that can be fairly quick but interesting.

This is from Cyprus and is very similar to lasagne but milder. It is called PASTICCI, sounds like ice cream i know.

FILLING
450g/ 1 lb of quorn mince
large onion (chopped)
1 clove garlic
1 tbls thyme
1 tbls tomato puree
1 400g/ 14oz tin tomatoes with herbs
225g/ 8oz pasta tubes
SAUCE
25g/1 oz butter
40g/ 1 1/2 oz plain flour
600ml/ 1 pt milk
175g/ 6 oz haloumi cheese

Fry the mince in a little oil for a few minutes, add the onion, garlic anf thyme and cook for 5 minutes. Stir in the tomato puree and can of tomatoes. Season well. Cover abnd simmer for 30 minutes.
Meanwhile bring a large pan of salted water to the boil for the pasta and then cook the pasta for 10 minutes. Drain and transfer to a large bowl. Pre heat the oven to 375f gas 5.
To make the sauce, melt the butter, beat in the flour and cook for one minute stirring constantly. Remove from the heat and add the milk. Cook for 5-8 minutes until boiled and thickened.
Spoon the mince mixture into a shallow 2 1/2 pint dish, mix about 1/4 of the cheese sauce with the pasta and pour on top of the mince mixture, pourrest of the sauce over the top. Cook in the oven for 30 minutes.

Vegan Lasagna

It's easy to make vegan lasagna. All you need are noodles, good tomato sauce, and a tasty tofu mixture in place of the traditional ricotta cheese.

Yield 8 servings
Time 45 minutes
Tools large saucepan
small saucepan
bowl
potato masher
wooden spoon
ladle
9x13 in. baking dish

Ingredients 2-3 c Italian tomato sauce, warm
1 pound dry lasagna noodles
2 pounds firm tofu, drained
2 T garlic, minced
¼ c basil, chopped
1 T fresh oregano, chopped OR 1½ t dried
½ t salt
black pepper
2 pounds fresh spinach, de-stemmed and washed

Directions If the lasagna noodles need to be cooked before use, do this first, following the instructions on packet, and then set them aside to cool slightly. It's a good idea to cook with a T of oil, to prevent them sticking together.
Place tofu in a bowl and mash with a potato masher or your fingers. Combine with garlic, basil, parsley, oregano, salt, and pepper.

Preheat oven to 400.

Ladle a bit of the warm sauce into the baking dish and spread it around so that the bottom of the dish is lightly coated.

Place lasagna noodles in the pan to form a single layer. If necessary, break noodles to fill gaps.

Sprinkle 1/3 of the tofu mixture on the noodles, then lay out 1/3 of the spinach on top of that. Cover with tomato sauce.

Repeat twice, using 1/3 of ingredients for each layer, saving a sprinkle of tofu to garnish the top.

Cover with foil and bake for 30 minutes, until sauce is bubbly. Let cool slightly and serve

My veggie sister in law loves this:
Goat's cheese and caramelised red onion tartlets - and they're dead easy. Buy some ready rolled puff pastry and cut into squares (whatever size you like). Score a frame round the edge of each square (not cutting right through the pastry) and onto the centre, place some caramelised red onions, topped with a circle of goat's cheese and a sprig of thyme, then bake in the oven at about 190 until the pastry has risen round the outside of the topping. Serve with a salad.

Tips:
To caramelise the onions, fry gently in butter with a teaspoon of brown sugar until they've gone golden and sticky, it'll take at least 20 minutes, keep the heat low. Goat's cheese is easier to slice with a hot, wet knife otherwise it can be pretty sticky,.

No problem this is my favourite. Cook some spaghetti and while it is cooking chop loads of cherry tomatoes in half, add 3 cloves of garlic (I usually add dried chilli flakes at this stage but they could be left out. Then ad a few tablespoons of olive oil, add some fresh basil (loads if no chilli) and a good amount of olives. By then the spaghetti will be cooked all you have to do then is add some feta cheese to the tomatoes and serve

If he likes sweet and sour try this.

cut cucumber, spring onions, broccoli, carrots (at angle 4mm thick) and Capsicums.

heat up a wok with sesame oil in it
when the oil is very very very hot

add the vegetables separately

add vinegar and sugar (salt and pepper if you wish)

remove the vegetables from the wok quickly (they should be cooked on outside almost chard but un cooked on inside)

dish up in separate bowl with steamed rice.

the different vegetables since they are not fully cooked or drowned in spices or chili will bring their own flavour and each should taste very different making sure the dish is not bland.

A really fun vegetarian lasagna I've always liked is one that substitutes half the noodles for roasted zucchini and eggplant. Just roast them with salt, pepper, and olive oil in the oven until they're tender, then layer them with meatless sauce and ricotta cheese, alternating with regular lasagna noodles. It's interesting, easy, and delicious!

I make a great vegetable panini..Don't meed a special machine can just be grilled bread even. Take the fresh veggies.(zucchini,yellow squash,red onions,portabella mushrooms,) slice thin,sprinkle with olive oil and salt and pepper and maybe a little garlic powder and bake flat on a cookie sheet about 10 minutes @ 350..place on bread and grill...can even be topped with a tomato slice and cheese and served open faced..........

A Bolgnese sauce his minced beef in it. Suppose you could use Quorn as a substitute. (Yuk). Lasagne is just a name for pasta in large flat sheets. I don't think your guest is a vegetarian. He's just a fussy eater. Fussy eaters should eat at home. That way they won't get upset.

You can do a veggie version of red beans and rice.

Rice
Tin of kidney beans
Onion
Tin of tomatoes
Garlic
Vegetarian sausages

Boil the rice.

Fry onion and garlic. Add tomatoes and cook. Add kidney beans and veggie sausages and heat through.

Mix with the rice (or put on top of rice if you prefer).

Easy!

Risotto - mushroom, cream, spring onion, veg stock, very easy! Takes about 25 minutes.
