It was Louis Pasteur, He'd been asked in 1863 by Napalean III to discover why so much wine was going bad. He discovered it was the effect of oxygen. As part of his experiments he placed bottles of wine in a tank and heated the water (i.e. pasteurized the wine).

Pasteurizing wine has subseqently been done to make wines 'kosher', but is otherwise not part of normal winemaking.
