Pearl onions.... are small, white or red, oval-shaped onion that are ofter pickled and also used whole in stews and braised dishes.

Actually, you may use any that you prefer. It really depends on if you will be pickeling something else with them such as Herring, then you would want to use slices otherwise the nice small ones are good. Like I said it's whatever you prefer to use.

My mom uses the small purple ones.. after they are pickled ... they taste spicy and sweet which is oh sooo mouth watering... and perfect as side dish for fried dishes ..

any sweet. they tend to take on the flavor of the brine, stay oniony, and not have all the heat.
