Depends what languages you already know.

If you already know any romance languages like french or spanish then italian would be easy, I'd suggest too easy. You should already know how to read most romance languages once you have a couple under your belt.

German is the most useful there. It's the modern language of business (outside of english, though anybody that knows german knows english, it's a massive courtesy to give it a go) as well as having funny words.

I'm learning ancient greek at the moment and learning a new alphabet is great fun. I also have an appreciation for the way nouns are structured with declensions, being that it ultimately makes life much easier, assuming you get your head round it in the first place. Of course, once you have greek and a romance language under your belt, you'll be able to master all southern european languages with no problems.

Russian I want to learn. Once again you're learning a new alphabet and you'll be able to communicate with most of those former soviet states

If you don't have a specific purpose for your life or career, yet, generally the most useful are German and Italian; for an English speaker they can both have something difficult and something more simple, compared to each other.
Strange enough, for my experience learning Russian is more simple if you know Italian, first, because the "logic" inside Russians sentences is more similar to Italian ones than English'. So you can even consider learning Italian+Russian! :)
Anyway, the best choice came from your life, current and future: in some working area (apart from English) Italian is important, while somewhere else Russian or German are...

It depends on where you live, what you are going to do with that language, but if you are doing it only as a hobby without any particular purpose, I think Italian is the easiest, nicest to hear and more useful nowadays. Besides Italians are friendlier than the rest. I am learning it and have a lot of fun meeting Italians. There are more useful since more Italian products are sold in greater number of outlets and more Italian restaurants are found around the world than the other three nationalities or languages mentioned above.
Buona fortuna, mia amico!
Good luck, my friend!

OH you have a world of choices!

Italian is very similar to Spanish in many ways.

Russian is very useful in our global community.

German is very handy if you are in the military (no joke).

Dead languages like ancient Greek and Latin are required to understand the "root" of most if not all medical, theological and mathematical terminology.

If your are a business or engineering major in the USA, would however focus my languages skills in Spanish and Japanese.

If you are in business and oil/gas or chemical related- try Fadi (Saudi Arabian). and Spanish or even French. {many Asian countries speak French, in Africa and as do British in foreign lands}

Law enforcement- Spanish (specialize in the "Latina" spoken in that area) Mexican, Cuban, South American all have different types of the same language, that is totally different. Or try Vietnamese or Korean in most large or coastal (shipping) ports this language is in high demand.

So it depends on what global market you wish to work IN and where in this country you plan to make the most effective use of that language. This skill must be practiced daily, seriously, so get a "Buddy" and speak and write only in the new language.

A "native tongue" can help you with the correct way its used, not just the correct manner the college professor recommends.,
