It is appropriate to give the holiday greeting, such as,
Happy New Year Mr. Smith, Happy Thanksgiving Mrs. Smith. Since these are national holidays, not religious.

If you are SURE of your boss' religious views, you may use Merry Christmas Mr. Smith, only if you know he/she has used the greeting themselves. Then and only then, can you be sure not to place anyone in an uncomfortable position. Some bosses are very generic in celebration, so keep it tame. Some bosses are very distant with their personal lives, so stand clear.

If you are close enough and familiar enough to them, you can safely wish them a good holiday anytime. Until you know for sure, it may be safe, but corny, to just wish them "Happy Monday" Mr.Smith!

just write to him/her as you would any formal correspondence.

Dear Mr. Bossman,

or just Mr. Bossman, or his first name, if you are informal like that in the office.
